The holidays are almost here! These cold winter months provide nice opportunities to warm your house with good food, friends and family. MomsRising.org was honored to attend the 2014 Latinos in Tech Innovation and Social Media (LATISM) conference in California last week. Our own Elisa Batista participated in a panel discussion in Spanish about mobilizing the Latino community to live healthier lives. Her presentation largely focused on junk food marketing to Latino youth, and what parents can do to help their children make the right food choices. Read more about her experience on the blog!

* Recipe: Winter Squash Custard

Winter squashes deliver an ample dose of dietary fiber, making it an exceptionally heartfriendly choice. It provides significant amounts of potassium which is important for bone health, vitamin B6 which is essential for proper functioning of the nervous and immune systems. No one will even guess it’s healthy because it’s so delicious.
Ingredients: 2 cup winter squash (Butternut, Acorn or Kabocha puree); 2 large eggs; 1⁄2 cup pure maple syrup; 1 Tbsp organic cornstarch; 1 Tbsp pumpkin pie spice; 1⁄4 Tsp salt; 1 cup milk
Instructions:
- Preheat oven to 350 and put a kettle of water on to boil. Lightly grease 6 glass custard cups with butter or oil.
- Combine the squash, eggs and sugars in a large bowl. Stir in dry ingredients. Add milk and stir until a smooth and uniform consistency is reached.
- Pour the squash mixture into the prepared cups and place them in a 2 inch deep roasting or baking pan. Pour an inch of boiling water in the pan.
- Bake for about 50 minutes. Start checking at 40 minutes to see if it's set. Once a toothpick comes out clean the custard is done.
- Serve warm or chilled with homemade whipped topping.
