Healthy Eating during Cancer Treatment and Survivorship: Simple, Wholesome, Easy Chard Recipe
Cancer patients are recommended to follow the same healthy diet as the general public. The emphasis should be on eating plenty of fruits and vegetables, healthy fats, whole grains, and lean proteins. But side effects of treatment can make this difficult, and cooking a meal can seem daunting when cancer fatigue has left you wiped out. Staying well nourished is an important part of cancer treatment. Not eating enough will worsen fatigue, creating a vicious circle that can be hard to get out of. That’s why we focus on simple, wholesome yet easy recipes such as our chard salad recipe below.
This tasty recipe can be prepared in just 20 minutes and will keep in the fridge for a couple of days, plus it makes good use of swiss chard which is just coming into season now. Chard is related to beetroot and is packed with the same antioxidant, anti-inflammatory phytochemicals which are our allies in the fight against cancer. Raw leafy green vegetables can be off-limits to cancer patients with neutropenia as they are difficult to wash, so having them cooked as in this salad is a great way to include leafy greens into their diet in a safe way.
